Luscious Spinach Soup


Remember our favorite cartoon popeye and its love for spinach, he sure was smart enough to eat spinach to gain strength and impress olive :)



Spinach dark leafy green vegetable loaded with tons of nutrients in a low calorie package . It is important for skin and hair, bone health, and provide all nutrients - protein, iron, vitamins and minerals. Spinach also helps in lowering the risk of cancer, lowering blood pressure, improving bone health and lowering the risk of developing asthma .

I too was definitely impressed by popeye and always love preparing spinach soup which is tasty but healthy and very easy to make. Also it has a twist of tangy taste as compared to old household recipes.


Ingredients

  • 1 Bunch spinach

  • 1-2 stalk of celery

  • 2-3 cloves of garlic

  • 1 medium chopped onion

  • 1 medium Tomato chopped

  • 1 chili chopped

  • 1 tsp olive oil

  • Half an inch chopped ginger

  • Squirt of fresh lemon

  • Black pepper to taste

  • Salt to taste

  • pinch of spices like nutmeg and cinnamon -optional

Method

Pour oil in saucepan over medium heat. Add onion, garlic, chili, ginger ,salt and pepper, and cook, stirring occasionally, for 5 minutes to induce the flavors. Add chopped onions and cook, stirring occasionally, for 3 minutes till they change their color. Add chopped tomatoes in the pan and cook for 2 minutes. Add chopped spinach and pour in broth (or water).

Bring to a simmer over medium heat and cook until the vegetables are soft, about 15-20 minutes. Puree the soup with an immersion blender or regular blender (in batches), leaving it a little chunky if desired. (Use caution when pureeing hot liquids.).

Pour the puree in the saucepan and let it simmer for another 15 minutes to release the flavors. Add nutmeg(optional) and salt if required more. After 15 minutes served it with croutons and grated cheese(Paneer).
