Stuffed Bell peppers


I always love to have different kind of bell peppers in my pantry. You can use it in so many different recipe like in sandwiches, salads , snacks and they never fail to impress me. They have a nice tangy taste and crispy texture which helps in enhancing the flavor profile but also the presentation.


In addition to the taste, Bell peppers provide nutritional & health benefits too. Bell peppers, are rich source of vitamin-C and has very less calories and fats-100 g provides just 31 calories. It also contains good levels of vitamin-A. 100 g of sweet pepper has 3131 IU or 101% of vitamin A.


So the stuffed bell peppers can never go wrong to treat yourself once a while.


Ingredients


2-3 Bell peppers

1/2 cup corn

2-3 tsp oil,

100 gm grated panner or cheese

1 medium potato boiled and mashed

1/2 cup chopped cilantro

1/2 tsp sesame seeds

1/4 tsp garam masala

1/4 tsp dry mango powder

1/2 tsp red chili powder

pinch of asafoetida

Drops of lemon juice

Salt as required(use black salt as well)


Method

  1. Remove the above layer of capsicum with the all the seeds to make it look like cup. Do it gently make sure its not cut on the bottom as pepper need to stand up un the pan.

  2. In a separate bowl mix mashed potato, panner, chili, onion, garam masala,black salt, mango powder ,cilantro, sesame seeds , and oil (Ingredients measurements can be changes to suit as per your flavors).

  3. Stuffed the above mixture in the peppers properly so they doesn't fall out.

  4. In a pan add oil, once oil becomes hot add asafoetida and the stuffed peppers in a still position. change the heat to medium, cover it and let it cook.

  5. Keep checking and flip it to cook at all the sides.If required add little more oil as well.

  6. Once cook add lemon juice ,garnish it and serve.
