Jackfruit Biryani (Kathal Biryani)


Biryani is flavoured rice with lot of meat or egg or vegetables. The main ingredients of biryani are rice, spices, herbs, vegetables and non vegetarian products and it is quite famous in northern as well as southern part of India. To be honest I never like Vegetable biryani(As I have limited option as a vegetarian :) until I discovered this amazing biryani made with kathal which made me a big fan of Biryani. Now whenever I have guests at my home its is a must have in my menu.


Ingredients: (Servings 2-3)


2 chili chopped

2-3 cloves of garlic

1/2 inch garlic chopped

1 large onion chopped

1 medium tomato chopped

1/2 tsp turmeric powder

1/2 tsp coriander powder

1 tsp cumin seeds

1/4 tsp mustard seeds

1/4 tsp red chili powder

1/4 tsp black pepper

1/4 tsp nutmeg

1/2 kg(500 gm) unripe jackfruit chopped

1.5 cups basmati rice

4 cups water for cooking the rice

water for soaking the rice

2 to 3 cloves/laung

1 Tejpatta/Indian bay leaf

salt as required

3 tsp oil for gravy

1 tsp ghee


*You can make adjustments in the ingredients as per taste .


Method


preparing the rice:

  1. First rinse the rice till the water runs clear of the starch.

  2. Then soak the rice in enough water for 20 mins.(helps in cooking rice very quickly)

  3. Boil 4 cups of water in a pan or pot.

  4. Drain the rice and then add it to the boiling water.

  5. Season with little salt(optional) and cook the rice till the grains are ¾th cooked. drain and keep the rice aside.

  6. Once the all the steam has gone from the rice, cover the rice.

preparing the jackfruit with gravy:

  1. Rinse jackfruit in water.

  2. Heat oil in a dutch oven or a pot/pan.

  3. Meanwhile add the sliced onions, tomatoes,chili,garlic and ginger in a grinder and form a thick paste. you can add little water while grinding.

  4. Once the oil becomes hot ,add all the whole spices - cumin seeds ,mustard seeds, cloves, bay leaves. saute for some seconds until fragrant.

  5. Then add the the onion -chili-tomato-garlic paste we made earlier and add turmeric, coriander powder , chili powder, black pepper & nutmeg. let them cook till color of the paste changes to brown and it forms a gravy.

  6. Once the color changes to brown add chopped jackfruit.

  7. Stir and add water,salt and cover the pot with its lid.

  8. Simmer the gravy till the jackfruit is cooked and tender.

  9. If the water dries up while cooking, then you can add some water.

Assembling the biryani:

  1. When you are sure that the jackfruit is cooked put out 3/4 of the gravy from the pot for layering

  2. In the same dutch oven or pot, on top of the jackfruit gravy, add a layer of rice

  3. Add the jackfruit gravy we taken out as one layer

  4. Spread a second layer of rice

  5. Like that you can 3-4 layers as per your desire

  6. Add little ghee, sprinkle some water . Cover it and cook for more 5-7 minutes in low flame to let rice absorb all the flavors and is cook completely

  7. When done, a serve the kathal biryani with raita & pickle.
