Spinach corn sandwich
Whenever I visit coffee cafe day I used to always order spinach corn sandwich. Ingredients used in this recipe was not only healthy but it was tasty too. Mine today's recipe is inspired by CCD spinach corn sandwich with twist of my flavors. It is simple and easy to make especially for health conscious foodie like me. :)
Ingredients 8 Bread lices 1 tbsp olive oil 1/2 medium onion finely chopped(optional) 2 cloves garlic finely chopped
1 green chili finely chopped 1/2 cup sweet Corn kernels (cooked in boiling water) 1 cup spinach finely chopped 1 tbsp cornflour 2-3 tbsp water Salt to taste 1/4 tbsp black Pepper (powder, as per taste) 2-3 leaves basil Oregano as per taste 1/2 tsp chilli flakes Grated cheese Butter for toasting bread
Method
Heat butter in a pan, add finely chopped chili, onion and garlic. Saute until onions turn transparent.
Add corn and saute for a few more seconds.(Make sure corn is precooked in hot boiling water.
Add spinach and cook until they become limp(all water is removed). Add salt & pepper as needed.
Reduce the heat, add cornflour and mix well. Then add water(you can use vegetable broth as well ) and cook stirring continuously. When it starts thickening, switch off the heat.
Add basil, oregano and chili flakes. Add grated cheese(optional, you can add mayo as well) and mix well.
Spread the cheesy corn spinach mixture on the bread slices.
Cover it with another slice of bread. Butter the bread on the outside and toast on flat pan until golden brown and serve hot.
