Bruschetta

Whenever I have time crunch and have guest coming to my home. I go for bruschetta. Bruschetta is a simple and elegant appetizer to prepare within no time.


Ingredients:

  • 1 small baguette(Loaf of french bread)

  • 2 tablespoons olive oil

  • 1 ripe avocado

  • 2-3 cloves of garlic

  • 1 teaspoon fresh lemon juice

  • salt

  • ground pepper

  • 1 pint grape tomatoes, quartered

  • 1 small onions chopped

  • Basil leaves

Method:

  1. Preheat oven to 350 degrees F. Slice baguette diagonally into sixteen 1/2-inch-thick slices; brush both sides with a total of olive oil. Bake on a baking sheet until golden, about 8 minutes.

  2. Rub the garlic clove in the toasted baguette in side to be stuffed.

  3. Mash ripe avocado and prepare guacamole by adding lemon juice & salt. Add chopped grape tomatoes, onions and basil leaves and season with coarse salt,lemon juice and ground pepper. Spread on toasted bread; top with parmesan cheese if you want(optional).
