Healthy Zucchini bread

Zucchini bread. Sound little strange right !! But believe me this is one recipe I instantly fall in love with.

Using zucchini in your baking is perfect way to include fresh veggies in your diet without compromising on the taste . One good thing about this bread is no one will ever notice the zucchini as it has no flavor when used in baking.


For those who are using zucchini for the first time in baking make sure you use shredded zucchini after removing the excess water from it. Otherwise bread will come out to be soggy and soggy bread is not ain't good.


For removing extra water place the grated zucchini in a paper towel and squeeze until all the water drains out and gets soaked up. Then you can used that zucchini in your bread.


This low calorie ( 1 slice-150 cal ) bread is perfect way to enjoy your weekend in a healthy way.


Serving (10 slices)


INGREDIENTS

  • 1 cup all-purpose flour

  • ½ cup whole wheat flour

  • 1 tsp. baking powder

  • ½ tsp. baking soda

  • ¼ tsp. nutmeg

  • ½ tsp. salt

  • ½ cup plain Greek yogurt

  • ¼ cup vegetable oil

  • ½ cup honey

  • 2 tbsp brown sugar

  • 1 tsp. vanilla extract

  • 1½ cups grated zucchini (excess water removed)

Method

  1. Preheat oven to 350 degrees. Prepare a 8" x 4" loaf pan with oil .

  2. In a large bowl, whisk together flours, baking powder, baking soda, nutmeg and salt until combined.

  3. In a separate bowl, mix together yogurt, oil, honey, brown sugar and vanilla extract then add grated zucchini. Fold in flour mixture until all combined and pour mixture into prepared loaf pan.

  4. Bake for 45 min to an hour or until a toothpick inserted in the middle comes out clean. Remove bread from the pan and allow to cool on a wire rack for about 10 minutes. Slice and enjoy!
